Each vineyard has poor soils — clay loam, sand and white stone shingle — that combine with the extreme temperature swings of the wind-whipped area to ensure the development of intense flavor and bracing acidity. Eight percent of the wine was fermented in oak to add a kick of depth and spice on the mid- to back palate. Otherwise, this wine has all the pineapple, lemon-lime and green apple you've come to expect from New Zealand's stainless steel sauvignon blancs.
