Classic Amarone -ruby red with garnet hues- big ripe red
fruit, spicy aromas of liquorice, black pepper and hints of chocolate. Tenuta
Julia is well structured with round, sweet tannins.
Amarone della Valpolicella is a big, expansive red, made
from a blend of local grapes, typically Corvina, Rondinella and Molinara.
Amarone is unique, as much a product of technique as it is of geographical
origin, climate and grape variety. The appassimento process is the key to
Amarone's distinctiveness. After harvesting, the grapes are left to dry on
racks in well-ventilated rooms for up to three months (November through
January). During this time the sugars concentrate and the botrytis oxidizes the
grape acids and increases the glycerine content. A cool fermentation follows,
lasting 40 to 45 days. After racking, the partially fermented Amarone is left
on its lees in a warm environment to encourage the development of a yeast
tolerant to high levels of alcohol, which completes the fermentation to
dryness.
When young, these red wines exhibit dried cherry or prune
flavors with a rich, mouth-filling texture driven by 15 to 17 percent alcohol.

A more economical wine is the product of the Ripasso
technique, which involves passing the fermenting fresh grape juice across dried
pomace; unpressed skins left over from Amarone production (which have been previously dried)
; to increase the strength of the wine. This adds richness and depth to
the fresh grape juice.
