Jason Woodbridge and his winemaking team create Layer Cake wines throughout the world. They select areas to best reflect the varietal while showcasing the farmer and terroir. These wines are a tribute to Jason's grandfather who told him that properly made wines are ""like a delicious cake layered with fruit, mocha and chocolate, hints of spice and rich, always rich. "" He also applied that analogy to soil because the wine's flavor is influenced by minerals drawn from different layers of earth. All Layer Cake wines are high quality and handcrafted, but value priced. Primitivo (genetically identical to Zinfandel per UC Davis geneticist Carole Meredith) has been a major winemaking grape in Italy, so this wine is crafted in Puglia. The Primitivo vines are at least 80 (and some more than 100) years old. Their roots grow deep because the climate is very hot and dry. Old vines tend to tame the rambunctious nature of Primtivo so that yields are lower and flavors concentrated. Grapes are handpicked and the wine is fermented in stainless steel to accentuate the fruit flavors. Lots that are relatively more tannic are aged in French oak barriques to soften the tannins. ""The wine is opaque and purple-colored with a nose of jammy black cherry and blackberry fruit, truffles, tar, and spice.
