Jason Woodbridge and his winemaking team create Layer Cake wines throughout the world. They select areas to best reflect the varietal while showcasing the farmer and terroir. These wines are a tribute to Jason's grandfather who told him that properly made wines are ""like a delicious cake layered with fruit, mocha and chocolate, hints of spice and rich, always rich. "" He also applied that analogy to soil because the wine's flavor is influenced by minerals drawn from different layers of earth. Argentina's most important wine making grape is Malbec, so this wine is handcrafted from vineyards along the Mendoza River. This river, once 5 miles wide, is now home to many vineyards. The terrain looks like a dried out riverbed - it is clay and gravel covered with river rocks. This environment stresses the vines and produces concentrated flavors. The Malbec grapes ripen completely before being hand harvested, destemmed and sorted. ""The wine has a dense, purple core with a brilliant red rim. Black fruit is abundant in the nose followed closely by anise, chocolate and very pleasant touches of spice.
