The Valle
dell'Acate wines
recount the history and natural beauty of the Bidini manor. This is a site of
archaeological value, given the discovery of a necropolis that testifies to its
thriving past during the Greek domination. Its uncontaminated nature, the vines that lace
its slopes, and the clay-colored highlights of the terrain create a true
natural paradise in the stillness of the old millstone and the
"larder". The enchanting stone architecture evokes the ancient
peasant world, bringing the way that wine used to be made back to life, in an
atmosphere in which time seems to have stopped. The large room contains the Dal Negro presses
that replaced the old "shank" used to press the grapes. There are
large, bright openings that were used to introduce the just harvested grapes
into the "tracks" of the millstone. Here, men, women and
children enjoyed trading the grapes to the sound of songs and rhymes.
The channels through which the newly obtained must flowed "by
gravity" to the larder have been perfectly preserved. Aware of the inestimable value of these
traditions, in 2001, Giuseppe and Gaetana Jacono undertook the restoration of
the old millstone that has returned the construction to its ancient splendor. The history and fascination of this building
enchant the visitor's gaze and bring back the spirit and memory of the
illustrious roots of Sicilian culture.
This
wine is produced in Sicily and is a touch more reserved and racy than other
whites, with a long finish.
