Pegasus Bay Late Harvest Chardonnay 'Finale' 1999 375ml
| Finale is only made in special years and 1999 was one of these. The summer was predicted to be a La Niņa weather pattern, but the cool weather did not eventuate. Instead, the growing season was extremely warm and resulted in the chardonnay ripening perfectly. A small proportion of the crop was left late in the season and, under the influence of dewy mornings and warm autumn days, it developed clean noble botrytis.
After hand harvesting the shrunken berries were gently pressed to extract a small amount of golden juice, which was then fermented and matured on its natural yeast lees in French oak barriques for over 2 years.
The wine is star bright with a golden sheen. It shows a complex spectrum of aromas and flavours with nuances of dried apricots, peaches, figs, beeswax and honeysuckle. While it is concentrated and luscious, it is not cloying and has a long lingering after-taste reminiscent of scorched almonds and toffee. | |
